Behind the scenes at Midway, we’ve been deep in coffee tasting mode — trying different roasts, dialing in espresso, and figuring out what we keep reaching for cup after cup.
Some coffees felt perfect for slow mornings. Some tasted like they belonged next to a warm pastry. We wanted to build a coffee program that feels like the kind you look forward to on your way to work, after a walk downtown, or while catching up with friends.
We’re getting closer and closer to sharing it all with you, and we can’t wait for you to find your Midway favorite.

Tough day at the office…
Someone must taste the wine.
One of the important and fun parts of building Midway has been figuring out what wines we want to stock in the market. Not in a “pretentious swirling and sniffing” kind of way — even though we like that way too!
Midway is more of a:
“Would this be amazing with sandwiches, cheese, cake or a Friday night with friends?” kind of way.
We want the wine section at Midway to feel approachable, inspired, and easy to shop. Great bottles for dinner parties, porch nights, gifts, beach picnics, or just surviving Tuesday.
So yes… there have been many open bottles lately.
Strictly for research purposes, obviously.

The Midway is still a little ways out from opening, but the time has come for us to start building our team for this summer.
We’re looking for full-time team members including:
• experienced bakers
• passionate baristas
• focused sandwich makers
• friendly faces at the counter
• early-rising prep cooks
Most of all, we’re looking for people who love food service, enjoy working hard, and appreciate having their evenings free for family, friends, and life outside of work.

A great sandwich starts with great bread — and we’re making ours in house. Our delicious Mortadella sandwich and thyme and sea salt bread are just a preview of what’s coming to the menu this summer!

We know you’ve been wondering, why is it called The Midway?
Growing up in Gig Harbor, we rode the school bus to Harbor Heights Elementary School past the old Midway School house on 38th Street every single day. It was worn down, a little eerie and every kid on the bus swore it was haunted. So naturally, it became legendary in our young minds.
That same school house now has a new home in Downtown Gig Harbor, right behind the museum. A reminder of how far this community has come from humble beginnings — and how far we have come as individuals.
In our family, education has always been important. Our mom was an educator, and she’s where our love of food, entertaining, and bringing people together began. We wanted a way to honor her.
The Midway is that. Every meal, every guest, every story shared is a continuation of what she started.
Family. Community. Education. Food. Entertaining. History. Love.
We got the keys 🔑
Meet the team behind The Midway — Trish Huff, Nick Hosea, and Paige Casey.
Built on years of experience, family roots, and a deep connection to Gig Harbor — this has been a long time coming, and it’s finally starting to take shape.
Trish is a Gig Harbor restaurateur and sommelier, bringing years of experience in restaurant management, wine, and hospitality — now building The Midway alongside her brother.
Nick’s career spans kitchens like Nobu and Bobby Flay’s restaurants, along with global catering and ownership — now returning home to Gig Harbor to create something meaningful for the community.
Paige is The Midway’s General Manager, bringing a thoughtful, people-first approach and helping shape the day-to-day experience.
